Malic acid has three isomers: L-malic acid, D-malic acid and DL-malic acid. Naturally occurring malic acid is L-type and exists in almost all fruits, with the largest amount in pome fruits. Malic acid is odorless and has a special pleasant sour taste. It can be widely used in food and beverage, medicine, chemical industry and other fields, among which the demand in the food and beverage field accounts for more than 80%. One of the main uses of malic acid is as a food additive to add sour taste to food and beverage.
However, there has always been a problem in the application of malic acid: it has strong hygroscopicity. This greatly limits the further application of malic acid. Based on this, Hihealth launched moisture-proof malic acid.
1.Acidity regulator
L-Malic acid is an organic acid necessary for the human body and an ideal low-calorie food additive. L-Malic acid is an important component of natural fruit juice. Compared with citric acid, it has a higher acidity (20% stronger sourness than citric acid), but a softer taste, longer retention time, and a special aroma. It has been widely used in high-end beverages, food and other industries. Malic acid and citric acid can be used together to simulate the sour characteristics of natural fruits, making the taste more natural, harmonious, and full.
2. Skin care benefits
In tests on animals and human cells, the authors of the study found that malic acid may help increase collagen production and reverse signs of skin aging caused by the sun. A small study published in 2013 found that topical vitamin C and malic acid was an effective short-term treatment for melasma.
3. Effects on Sports
In a study published in 2015, researchers investigated the effectiveness of creatine-malate supplementation on sprinters and long-distance runners. After six weeks of supplementation and conditioning training, sprinters showed significant improvements in fitness, as measured by peak power, total work, body composition, and elevated growth hormone levels. In long-distance runners, the distance covered was significantly increased.
4.Impact on learning and memory
L-malic acid has a significant improvement effect on memory acquisition, consolidation and reproduction in mice, and can promote the spatial discrimination learning ability of normal mice.

The 48h and 72h water maze reaction times of the experimental group were significantly shorter than those of the control group. L-malic acid can improve the learning and memory ability of sleep-deprived rats.
5. Effect on the oral health
Three small clinical trials found that 1% malic acid mouth spray can increase saliva production and flow. Studies have shown that this mouth spray can reduce dry mouth caused by blood pressure medications and antidepressants, as well as dry mouth in the elderly.
